Organic Cloud Eggs: Video Recipe

Cloud Eggs are a really fun way to brighten up your breakfast and they’re surprisingly easy to make!
When we heard about #wakeuptoorganic happening this month, we couldn’t wait to give them a try with some fresh, organic eggs and a lovely ripe avocado. So without further ado, here’s how you can make these fluffy creations yourself…

You Will Need

Organic Room Temperature Eggs
Bread for Toasting
1 Ripe Organic Avocado
Salt, Pepper and/or Chilli Flakes for seasoning

Method

Preheat your oven to 230C or Gas Mark 8

Grab your organic eggs and separate the whites from the yolks (this bit can be tricky so take your time)

Place your whole yolks to one side and place the whites into a large mixing bowl

Whisk the whites with a handy mixer at a medium speed until they are thick and contain stiff peaks

Line a baking tray with baking parchment

Spoon your fluffy mixture into mounds on the baking tray

Make small indent in the top of the mixture (this is for your yolks in a bit)

Bake the egg whites for 3-4 minutes

At this point you may want to prepare your avocado – we cut it into slices but feel free to mash it with some small tomato pieces for a guacamole vibe.

Once the egg white clouds are lightly browned, remove the tray from the oven and add the egg yolks

Return to the oven for a further 2 minutes

Season with salt, pepper and chilli flakes and serve straight away with your avocado!

Other Optional Toppings

You can also add additional flavourings such as chives or finely grated cheese to the egg whites before you cook them.
Or you could serve the eggs with any of the following suggestions:

Crispy Organic Bacon

Organic Smoked Salmon

Sundried Tomatoes

Organic Asparagus
