Mulled Wine Recipe

The Method

Place the sugar in a saucepan, add the peel of the clementines and the juice of the clementines + the juice of half a lemon. Heat over a medium heat.

Add your cloves, grated nutmeg and cinnamon stick (plus any other festive seasoning you desire) before stirring in enough red wine to cover the sugar and spices.

Let this shallow mixture simmer until the sugar has dissolved into the wine, then bring it to the boil. Keep boiling this mixture until you’re left with a thick syrup. This will enable all the flavours to infuse together and will also allow you to add the rest of the red wine without burning off all the alcohol during the warming process.

When you’re happy that the syrup is thick enough, turn down the heat, add the star anise and the remainder of the red wine. Keep gently heating it until it reaches your desired temperature, then ladle your Mulled Wine into heatproof glasses and garnish with a slice of clementine.
